When I have casual get-togethers with friends, I love serving snacks and drinks. However, I only like to make one of those things from scratch. If I make cocktails with lots of ingredients, I’ll buy a simple pre-made snack from the grocery store. Conversely, if I make the snack, I’m always looking for a no-fuss drink that I can just pour and serve. You get one or the other, but not both, friends! Unless we’re talking about my annual sangria party, where I’ll do both from scratch, but that’s a once-a-year event.

My go-to appetizer this summer is going to be these super simple Bacon-Wrapped Watermelon Bites. I know they sound a little strange, but stay with me. The saltiness of the bacon works really well with the sweet, juicy watermelon. And basil and watermelon are a natural flavor pairing, so that third ingredient really brings these bites together.

Bacon-Wrapped Watermelon Bites

Yield: 16 pieces
Prep Time: 10 minutes
Cook Time: 14 minutes

Ingredients

  • 1 pound (16 slices) hardwood smoked bacon
  • 1/2 small watermelon, diced (you'll need sixteen 1-1/2 to 2 inch cubes of watermelon)
  • 16 small basil leaves

Instructions

  1. Preheat oven to 375 degrees F. Place bacon in single layer on parchment-lined rimmed baking pan. Transfer to oven and bake 14 to 16 minutes or until most fat is rendered. Bacon pieces should be starting to crisp around the edges, but soft and pliable in the middle.
  2. While warm, wrap bacon slices around watermelon cubes. Top each bite with basil leaf and secure with toothpick.
