When I think of childhood summers, I think of lots of time spent outside, going to Lake Michigan once in awhile, and frozen novelties. My family wasn’t a big dessert family – we certainly didn’t have it every night. But during the warmer months, our freezer always seemed to be stocked with a variety of ice cream sandwiches and frozen fruit bars. Dinners ended with a sweet and frosty cold note.
These Carrot Mango Frozen Yogurt Pops are kind of a grown-up version of the treats I remember from my childhood, although I think kids would love these, too! They are a simple combination of vanilla yogurt, a little honey for extra sweetness and V8 Veggie Blends Carrot Mango. For an adults-only version, I like to add a splash of rum (vodka works well, too).

Carrot Mango Frozen Yogurt Pops
- 1 cup vanilla yogurt
- 1/2 cup V8 Veggie Blends Carrot Mango
- 2 tablespoons spiced rum (optional) or 2 additional tablespoons V8
- 1 tablespoon honey
- In large liquid measuring cup, whisk together yogurt, V8 Veggie Blends Carrot Mango, rum and honey. Pour mixture into 10 (2.5 ounce) ice pop molds; insert wooden sticks, cover and freeze.
