I was completely jumping for joy yesterday when I found out that I had been named one of Shape Magazine’s Favorite Healthy Food Blogs. One day later, I’m here to totally let the editor of that list down. Because these blondies are a decadent treat chock full of hazelnuts and white chocolate, and topped with crunchy sea salt. No apologies. We all need a sweet treat now and then.

But you know what? I only had one of these and then sent the rest to work with my husband. OK, maybe 1-1/2. I don’t know, possibly 1-3/4. Well, you know how when you cut brownies or bars, there’s like, always chunks that stick to the knife, and crusty corner bits that stick to the pan? I mean, somebody has to eat those. And since nobody knows they ever existed except the person doing the cutting, then calories probably don’t exist in those bits either. And THAT’S how this blog was named a Healthy Food Blog.

I don’t bake often, so when I do, I make sure it’s worth my while, and just go ahead and throw all of the good things in there. I put a double dose of hazelnut goodness in these by using both hazelnut flour and chopped hazelnuts. A generous dose of white chocolate chips get all melty in the oven and infuse the bars with a gooey sweetness.

In my opinion, the best desserts always have a salty component that balance the sweetness. I know it’s bizarre to accuse any dessert of being too sweet, but most desserts without a pinch of salt are just that for my tastebuds. That’s why I keep a big jar of SaltWorks Snowflake Salt on the baking shelf in my pantry cupboard. Hazelnut & White Chocolate Sea Salt Blondies

Ingredients:


  • Nonstick cooking spray

  • 1 cup plus 2 tablespoons all-purpose flour

  • 1 cup hazelnut meal/flour

  • 1/2 teaspoon SaltWorks Snowflake sea salt, plus extra for sprinkling

  • 1/2 teaspoon baking soda

  • 12 tablespoons unsalted butter, melted

  • 3/4 cup granulated sugar

  • 3/4 cup packed brown sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1-1/2 cups white chocolate chips

  • 3/4 cup chopped hazelnuts


Directions:


  1. Preheat oven to 350 degrees F. Spray 9x13 baking pan with cooking spray.

  2. In medium bowl, whisk all-purpose flour, hazelnut meal/flour, 1/2 teaspoon salt and baking soda until well combined.

  3. In large bowl, with mixer at medium speed, mix butter, granulated sugar and brown sugar until well combined. Add eggs and vanilla; mix until fully incorporated. Add flour mixture in 3 additions, beating each addition until just incorporated. Fold in chocolate chips and hazelnuts.

  4. Spread batter evenly in prepared pan; sprinkle lightly with additional sea salt. Transfer to oven and bake 33 to 35 minutes or until golden brown and toothpick inserted in center of pan comes out clean. Transfer to wire rack to cool completely before cutting and serving.
