I saw an episode of Barefoot Contessa a few weeks ago in which Ina was roasting sausages and red grapes, together. I couldn’t get that combination out of my mind, so I just had to try it for myself. As evidenced in many of my recipes, I’m a big fan of the combination of sweet and savory. A little bit of fruity sweetness is a great pairing for almost any savory or spicy food.
Coincidentally, shortly after I came up with the idea for this recipe, I read an article that predicts grapes in savory entrees will be a food trend for 2014. It’s one of the few times in my life I’ve been trendy. If you ignore the fact that foxes are super trendy right now. I was born a Fox (my maiden name), so any trendiness implied doesn’t really count.
Food and fox trends may come and go, but being able to make real food quickly and easily will always endure, as it’s important to know exactly what you are feeding your family. We don’t eat a lot of packaged foods, instead making most of our meals out of fresh produce, meat and whole grains.
Lundberg organic whole grain rice entrees are one of the few packaged products I’ve seen that fit in with a “real food” lifestyle – they are organic, GMO-free, vegan and made with whole grains. They make it easy to get a healthful, delicious dinner on the table every night. Inspired by Ina’s recipe, I wanted to use one of these entrees as part of a Spanish-inspired dinner party for four. Consider this skillet dinner a way to have a “double date” in the comfort of your own home.
It couldn’t be simpler – grab a box of Lundberg Organic Original Whole Grain Lentils & Rice and cook it on the stove. While that cooks away, grab a cast iron skillet and pluck some grapes from their stem. Throw a little olive oil, the grapes, and a few links of spicy chorizo sausage in the skillet. Put it in the oven. Relax with your guests while everything cooks, and dinner is served. Enjoy the flavor combination of the spicy sausage, subtly sweet red grapes and perfectly seasoned lentils and rice. Also, enjoy the compliments you’ll be receiving.

- 1 box Lundberg Organic Whole Grain Lentils & Rice
- 1-1/2 tablespoons extra virgin olive oil
- 1 large bunch red grapes, removed from stem
- 1 pound chorizo (in casings)
- 1/4 cup roughly chopped fresh parsley
- Preheat oven to 400 degrees F. Prepare Lundberg Organic Whole Grain Lentils & Rice as label directs.
- Meanwhile, coat bottom of cast iron skillet with oil. Add grapes, then place chorizo on top of grapes. Transfer to oven and cook 16 to 18 minutes or until internal temperature of chorizo reaches 145 degrees F, flipping chorizo once.
- Sprinkle chorizo and grapes with parsley; serve with lentils and rice.
