Spring Pea & Radish Pizza

Spring Pea & Radish Pizza - Celebrate spring's best fresh produce with this grilled pizza! | foxeslovelemons.com

My husband LOVES making pizza – he grills it in the summer, bakes it in the winter, and comes up with a new flavor combo each time. In this monthly “guest post,” I’m going to sit back, relax, and maybe take the occasional photo while Jeff makes me a pizza and tells you about it. Here he is:

The motivation for this pizza was an adorable story Lori told me about our dog Izzy.  You know her as the little yellow ball of fur that photo bombs much of Lori’s work. Well, she has this thing for our Door To Door Organics delivery guy, Mark. Door To Door Organics is this neat website where you order fresh, delicious products like fruits, veggies, meat and even snacks that then get delivered to your house once a week (find our full rundown of the service HERE).

Door to Door Organics supplied many of the ingredients for this pizza, like the fresh spring peas in their pods, which was a new ingredient for Lori and I. Their subtle sweetness paired perfectly with the salty organic feta cheese. We were also able to order locally made pizza sauce, in-season radishes, beautiful shallots and carrots, and some nice salami.

For us, the delivery day for Door To Door Organics is Friday around 3PM. Each week, Izzy sits in front of our glass front door and waits for Mark to arrive. She knows he’s on his way, because Lori puts last week’s box by the front door so that she can exchange it for the new box.

Izzy usually barks or girl-growls at delivery people – the FedEx guy, postal workers, pizza delivery dudes – you name it. But not Mark. She sits there wagging her tail and always tries to lick him when he hands over the package of groceries. What’s strange is that Door to Door doesn’t actually deliver dog treats. Maybe Izzy really likes organic radishes. Secretly, I think she just has a thing for guys with beards.

This Spring Pea & Radish Pizza (Lori kept calling it a “PEAzza”) is in honor of our dog’s secret crush. Be sure to follow Door to Door Organics on TwitterFacebook, and Instagram. You can also find great recipes on their site.

Spring Pea & Radish Pizza

Ingredients:

  • 1 ball of pizza dough, store-bought or homemade

  • 3/4 cup Local Folks Foods pizza sauce

  • 3 radishes, thinly sliced

  • 2 medium carrots, peeled and shredded

  • 2 shallots, thinly sliced

  • 1/3 pound English peas, shelled

  • 3 ounces Olli Salumeria salami

  • 1/2 cup crumbled Organic Valley feta cheese

  • Chopped fresh parsley, for garnish (optional)

Directions:

  1. Go out and fire up the grill. Grill pizza dough according to Grilled Pizza Tutorial. Alternatively, pizza crust can be baked in oven according to package directions. But, to be honest, in the summer grilling just feels right.

  2. A few minutes before crust is fully cooked, top with pizza sauce, radishes, carrots, shallots, peas, salami and cheese. Cook until toppings are warm and crust is cooked through. Remove from grill.

  3. Sprinkle pizza with parsley, if desired. Slice and serve immediately.
