This Italian Sausage Pasta is a 30-minute dinner with deeply browned sausage, tender kale and strozzapreti tossed in a creamy white wine and Parmesan sauce. It's rich and comforting, but still weeknight-practical.
1teaspoonkosher saltdivided, plus additional for pasta water
3garlic clovesminced
1teaspoonItalian seasoning
½teaspoonground black pepper

½cupdry white wine
1cupheavy cream
5ouncesbaby kale
½cupfinely grated Parmesan cheeseplus additional for garnish
Chopped fresh basil or parsleyfor garnish (optional)
Instructions
Heat large pot of salted water to boiling over high heat. Meanwhile, heat large Dutch oven over medium-high heat. Add sausage and cook 6 to 8 minutes or until deeply browned, breaking meat up with wooden spoon as it cooks.
Add pasta to boiling water and cook according to package instructions for al dente. *Do not drain the pasta until you’ve reserved 1/2 cup of pasta cooking water towards the end of the pasta cooking time.*
Reduce Dutch oven heat to medium. Add onion and 1/2 teaspoon salt to sausage and cook 4 to 5 minutes or until onion is softened, stirring occasionally.
Stir in garlic, Italian seasoning, black pepper and red pepper flakes and cook 30 seconds, stirring constantly.
Pour in wine and simmer 2 to 3 minutes or until slightly reduced, scraping up any browned bits from the bottom of the Dutch oven as it cooks.
Stir in cream and remaining 1/2 teaspoon salt. Simmer 3 to 4 minutes or until slightly thickened, stirring occasionally.
If you haven’t already done so, reserve 1/2 cup pasta cooking water, then drain pasta.
Add kale to Dutch oven, then add drained pasta on top of kale. Cook over low heat 1 to 2 minutes, tossing frequently, or until kale is just wilted. While tossing, add reserved pasta water a splash at a time until the sauce loosens and coats the pasta. You will probably need all of the pasta water.
Remove from heat and add Parmesan cheese. Stir until melted and the sauce is smooth and glossy. Garnish with herbs and additional Parmesan, if desired, and serve immediately.
