Oven Roasted Sweet Potato Cubes

Ingredients

  • 2 pounds sweet potatoes peeled and cut into 1-inch cubes
  • Nonstick cooking spray
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat oven to 400 degrees F. Spray large rimmed baking pan with cooking spray. Place potatoes on prepared pan.
  • Drizzle with oil, then toss until all potatoes are coated in oil. Sprinkle with salt and pepper and toss until well combined, then spread potatoes into a single layer, trying to keep space between each potato cube as much as possible.
  • Transfer to oven and bake 20 minutes. Use a pancake turner to flip potatoes; return to oven.
  • Bake 20 to 25 minutes longer or until potatoes are deep golden brown on the outside and very tender and velvety on the inside.
