Best Spinach Salad Recipe

Every single ingredient in this Best Spinach Salad can be washed, cooked, prepped or chopped in advance. Toss it together for a work week lunch or dinner. No side dishes needed.

Ingredients

  • 4 cups baby spinach
  • 8 slices Oven Bacon crumbled
  • 3 hard boiled eggs sliced
  • ½ English cucumber halved lengthwise and thinly sliced crosswise
  • ½ medium red onion thinly sliced
  • 2 cups cooked chopped chicken
  • 1 cup cherry tomatoes halved
  • cup crumbled feta cheese
  • ¼ cup roughly chopped walnuts
  • 1 batch Honey Mustard Dressing or 1 cup of dressing of your choice

Instructions

  • Arrange the spinach on either a large platter or divided among 4 individual plates. Layer all of the rest of the ingredients over the spinach.You can choose to scatter the ingredients for a more rustic looking salad, or you can use the toppings to create blocks or rows of ingredients for a more composed salad.
  • Serve salad with Honey Mustard Dressing.

Notes

  • The easiest way to get cooked chicken for this recipe is by using a rotisserie chicken. Or, if you’re having chicken for another meal earlier in the week, cook a few extra pieces and save them for this salad.
  • My favorite kitchen gadget for perfect hard boiled eggs is the Cuisinart egg cooker (affiliate link). It makes perfect hard boiled (or soft boiled!) eggs EVERY. SINGLE. TIME. I’m normally not into too many gadgets, but making hard boiled eggs frustrated me a lot until I bought this little appliance. I cannot recommend it enough!
