A Simple, Foolproof Technique For Crispy Prosciutto

A delicate, silky slice of fresh prosciutto is always magical, but sometimes, we’d rather it be a shatteringly crisp, savory topping. With just a few minutes in the oven, prosciutto transforms into a crunchy garnish that adds texture, flavor and wow-factor to just about anything you sprinkle it on.

Along with Parmesan Crisps, this crispy prosciutto is a beautiful finishing touch to our Risotto Milanese, where its salty crunch is the best counterpoint to the creamy saffron rice. But once you know how easy it is to make crisp prosciutto, you’ll find yourself making it for pastas, soups, salads, eggs and more.

  • prosciutto – thinly sliced prosciutto is all you need. Any brand of this salt-cured ham works here, but we actually recommend you DON’T use something super expensive or high-end, like Prosciutto di Parma. Those are best eaten at room temperature, where they’ll practically melt in your mouth. For crunchy prosciutto, a regular supermarket brand is fine.

Home Chef Tips For How To Crisp Prosciutto

  • Prosciutto firms up as it cools, so don’t worry if it seems slightly flexible when it first comes out of the oven.
  • Use parchment paper, not foil, to prevent sticking and uneven browning.
  • If your prosciutto is in paper-thin slices, check it at 8 minutes.
  • There are versions that use a microwave and paper towel to make crispy prosciutto. We’ve tested them and don’t recommend them. The texture isn’t as good as the oven version.

How To Use Crispy Prosciutto

Crispy prosciutto is one of those finishing touches that quietly steals the show, and makes every dish feel restaurant-worthy without a ton of extra effort. Think of it as really high-class bacon bits. Try it on:

Storage And Reheating

  • Refrigerate: Store in an airtight container for up to a day.
  • Reheat: If needed, re-crisp briefly in a 300 degree F oven or air fryer.
  • Freeze: Not recommended, as the texture will become chewy after thawing.
