You see, after years and years of making roasted sweet potatoes at home, I’ve learned some things.
The most important thing is the size you need to cut the potatoes. It took me a long time to realize this, but trying to save time by cutting the potatoes very small will backfire in the end.
Cut the potatoes too small, and they’re never going to get that fluffy, creamy, almost custard-y texture on the inside that is my absolute favorite thing.
But cut them too large, and they’re going to get way too brown on the outside before they get tender!

How to Roast Cubed Sweet Potatoes
1. TOSS. Place the potatoes on a rimmed sheet pan that has been sprayed well with cooking spray. Drizzle the potatoes with oil, then toss until all the potatoes are coated in oil. Sprinkle with salt and pepper, toss again, then spread the potatoes into a single layer, trying to keep space between each potato cube as much as possible.
2. BAKE. Bake 20 minutes, then use a pancake turner to flip the potatoes.
3. FINISH. Return the baking sheet to the oven and continue baking until the potatoes have deep caramelization on the outside and are very tender and velvety on the inside.
How long to roast sweet potatoes
Roasting potatoes at 400 degrees F typically takes about 40 to 45 minutes when the potatoes are cut into 1-inch cubes.
The cooking time will vary depending on the size of cubes, and how tender you like your potatoes. We like our roasted sweet potato cubes deep golden brown on the outside and very, very tender on the inside.
