Hey, today is my half birthday! I have no idea why I even know that. It’s not something I normally celebrate or even remember. But maybe this is the year where we do celebrate it.

Celebrate everything. Celebrate every single day. If you agree with me, maybe I can entice you to celebrate with this Cannoli Dip.

A perfect cannoli is one of my favorite desserts, but it’s hard to find a perfect cannoli.

The kind with a super crisp, fresh shell and sweet but not too sweet cheese filling. I’ve given up trying to find the perfect cannoli where I live.

And making them from scratch seems very labor intensive and not something I’m interested in right now.

So this cannoli dip is just a simple way for me to enjoy these flavors with minimal effort.

Cannoli chips and dip are a great treat for a small group or a large crowd.

One thing I love about this recipe is that it’s very easy to adapt to whatever size you need.

Want to make it for 2 or 3 people? I get it! I grew up in a family of 3 and now have my own family of 3.

We cut a lot of recipes down to size to suit our needs. This one is easy to halve without any complicated math.

And of course, for a small crowd, just choose a FEW of your favorite dippers for serving.

What is this cannoli dip recipe made of?

This dip is made of just five ingredients that you should be able to find at just about any mid- to large-size grocery store:

  • mascarpone cheese
  • ricotta cheese (make sure to use full fat ricotta, otherwise your dip may turn out runny)
  • powdered sugar
  • vanilla extract
  • mini chocolate chips

What should I use for dipping?

Just like with my New Year’s Eve snack board, let your imagination run wild here. When it’s safe to wander through the grocery store, do it and buy whatever you think would be great dipped into a creamy, sweet dip.

Cookies and crackers are classic. Almost any type of fruit that you can dunk into something is a great choice.

Broken pieces of waffle ice cream cones kind of mimic that cannoli shell flavor and texture.

And then, there’s potato chips. I know, it’s not what you’d expect. But when I made this dip, I just happened to have an open bag of potato chips in the cabinet.

I LOVE the combo of salty and sweet, so of course I had to try it. And those darn potato chips became my favorite dipper on the entire platter. Trust me. Just try it.

How long does cannoli dip last in the fridge?

Cannoli dip can be covered and kept in the refrigerator for up to 3 days. Stir before serving.

Cannoli Dip

Ingredients

  • 8 ounces room temperature mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 cup whole milk ricotta cheese
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips, plus additional for topping

Instructions

  1. In bowl of stand mixer fitted with whisk attachment, beat mascarpone cheese 2 to 3 minutes or until light and fluffy.
  2. Add powdered sugar, ricotta and vanilla and beat until well combined.
  3. Stir in chocolate chips. Transfer to refrigerator and chill at least 1 hour or up to 3 days.
  4. To serve, transfer to serving bowl and top with an additional sprinkle of chocolate chips.
