I went camping for just the third time recently. Since of my first two experiences, one was just OK and the other was downright miserable, I was preparing myself for the worst: rain, cold, and terrible food covered in dirt and ash. I did what I could to pack warm and dry clothes, and I prepared my stomach by making one last amazing meal at home.

Well, it did rain and it was cold at night, but the food actually pretty decent, thanks to some guys in our group that had experience with campground cooking. Still, all the food cooked in foil packets on a portable grill did not compare to the dinner Jeff and I made the night before heading off on the trip.

When I want to make a special meal at home, I turn to Certified Angus Beef® brand. I loved this recipe for Sweet Cherry and Chipotle Roasted New York Strip, but wanted to put my own spin on it. Instead of a New York strip roast, we grilled individual strip steaks. I made an incredibly quick sauce to go with it using dried cherries and chipotle peppers.

The tender and juicy steak was a treat all on it’s own, but a small cup of the sweet and spicy sauce on the side made things even better. It was a sophisticated steakhouse-style meal that was a breeze to prepare right at home. Strip Steaks with Cherry-Chipotle Sauce

Ingredients:


  • 1 chipotle pepper in adobo sauce, roughly chopped

  • Juice of 1/2 lemon

  • 3/4 cup water

  • 1/3 cup dried cherries

  • 1/4 cup chopped red onion

  • 1 teaspoon Worcestershire sauce

  • 4 Certified Angus Beef® brand strip steaks

  • Kosher salt and cracked black pepper


Directions:


  1. In small saucepot, combine chipotle pepper, lemon juice, water, cherries, onion and Worcestershire sauce. Cook over medium heat 12 to 14 minutes or until most liquid is evaporated. Transfer to food processor or blender and process until smooth (a few chunks are OK).

  2. Meanwhile, preheat outdoor grill for direct grilling over medium-high heat. Rub steaks with salt and pepper. Transfer to grill and cook to desired doneness (about 4 minutes per side for medium-rare). Remove steaks from grill; let rest 5 minutes. Serve with Cherry-Chipotle Sauce.
