Pomegranate, Orange & Gingersnap Parfaits

Pomegranate, Orange & Gingersnap Parfaits - a light, fruity dessert full of seasonal flavors! |
It’s no secret that the holidays can be tricky for healthy eating. Cookies and cakes everywhere, cheeseballs, lots of cocktails, the list goes on. I’m always in charge of taking dessert for Christmas Day dinner at my in-law’s house. By that evening, we are so stuffed with holiday goodies that it’s best to tread lightly for dessert. One of my favorite ways to do that is with these Pomegranate, Orange & Gingersnap Parfaits.

A lighter dessert doesn’t mean you have to give up your favorite seasonal flavors. Oranges and pomegranates are both in their prime, and they taste great together. Gingersnaps (or even homemade gingerbread) add a spicy counterpoint to the fruits, and a dollop of freshly made whipped cream tops it all off. This recipe can be made in parfait glasses or, for a larger crowd, you can build a big version in a trifle dish. Serve immediately if you want crunchy gingersnaps, but I like to let mine sit for an hour or so – it gives the gingersnaps a chance to soften a bit.
