Who’s ready for the weekend already? MEEEEE! I can’t wait to have three days to relax and unwind. Usually, I feel like Jeff and I end up doing yard work or some home repair project over Memorial Day weekend, but this year, we’re done with our landscaping project already, and I can’t think of anything else we need to do around the house. Woohoo! More time to watch parades, take naps in the backyard, go on bike rides, drink lemonade and walk my pooch.
Of course, in between all of these glorious activities, you’ll need some good food. We usually make a batch of ribs and sometimes homemade ice cream (pssst – I’ll have a new ice cream recipe for you tomorrow!). Other than that, the weekend is all about grilled items and other fun, easy, delicious food. I thought I’d round up some of my favorite recipes for Memorial Day weekend for you. They’ll be perfect whether you’re entertaining a crowd, going to a party, or just relaxing in a lawn chair like me.
Dips & Apps
Burrata with Grilled Red Pepper Dip – Grill some red peppers, grab some gooey burrata cheese, and make a simple and perfect cheese board as an appetizer.
Tabbouleh Hummus – A big bowl of fresh, healthy Mediterranean dip. Really, it’s two dips in one! Score!
Feta Salad Shooters – Layers of crunchy cucumber, tangy feta cheese, and fresh tomato and basil. How could you go wrong?
Lightened-Up Pimento Cheese Dip – Nobody will know this cheesy and tangy southern classic is lightened-up with Greek yogurt!

Spicy Chipotle-Mango Shrimp with Succotash – A fresh, light summer dish that comes together in under 30 minutes.
Grill-Roasted Chicken & Vegetables – A fancy way of saying “beer can chicken with veggies.”
Grilled Tuna with Marinated Tomato & Arugula Salad – Want to impress your guests? This is a restaurant-quality meal you can easily make right at home!
Grilled Pork Tacos with Pineapple Salsa – Slightly spicy grilled pork with a sweet and savory pineapple salsa. The perfect summer meal!
French Onion Chicken Sandwiches – One of my most popular recipes! All of the flavor of French Onion Soup, in a chicken sandwich!
Grilled Vegetable Sandwiches with Herbed Goat Cheese – Both vegetarians and meat lovers won’t be able to resist these colorful, fresh and tasty sandwiches.
Spinach-Artichoke Turkey Burgers – It’s like a big serving of spinach-artichoke dip in a pumpernickel bread bowl, except it’s on a burger. Even better! (The recipe calls for cooking these burgers on the stove, but that’s only because it was cold outside when I created these. Throw ’em on the grill!).
